Reverse Osmosis systems remove up to 99.8% of dissolved solids from the water by passing water through a semipermeable membrane under pressure. RO will remove most dissolved solids (ions) and other constituents that can give the beer an inconsistent taste. The result is water that is very low in minerals and alkalinity.
Many beers can be brewed with RO water without any modifications, but there are recipes that are enhanced with the addition of some minerals such as sodium chloride, baking soda, gypsum, epson salts, chalk, and some others.
